The Paddock Restaurant

The Paddock restaurant delivers unpretentious, wholesome fare that celebrates the quality of the local produce. A casual take on fine dining, the restaurant serves up seasonal creations for breakfast, lunch and dinner. Our new Executive Chef Simon Furley has created an à la carte menu which showcases the region’s finest ingredients, sourcing sustainable produce from the Scenic Rim and the surrounding region of South East Queensland.

The design of the restaurant with its floor-to-ceiling windows and soaring ceiling maximizes the views of the rolling green hills. Designed around the idea of a club house, the restaurant features a large fireplace to enjoy a wine in front of at the end of the day and a communal table for sharing a meal.

Please note, bookings are essential as guests will require an access code for the front gates.

Opening Hours

Lunch – 12noon until 3.30pm, Thursday to Sunday
Dinner – 5.30pm until 8pm, Wednesday to Sunday


Up and coming young Chef Simon Furley

Meet our Executive Chef

We are excited to announce our new Executive Chef Simon Furley will take over from Chef-in-Residence Cameron Matthews from 1 December 2021.

Simon was the former head chef at the hatted Homage restaurant, Spicers Hidden Vale, and was earmarked by Matthews for the role as one of Queensland’s brightest young chefs.

With a resume boasting experience as a private chef for high-net-worth clients all over Europe, and the swag of awards he and the culinary team received at Homage restaurant, the UK-born chef could find work at any of Australia’s top restaurants. However, Simon jumped at the opportunity to run his own restaurant on a privately- owned property where he could realise his own vision.

The development and implementation of sustainable and environmental practices is an ongoing dedication for Simon. The chef uses creative methods to reduce food waste like smoking, curing and fermentation so no produce is discarded and is introduced back into dishes in different interpretations. Simon also makes his own pottery by upcycling items like oyster shells and bone to create beautiful bespoke vessels to serve up dishes.

Under the helm of our Executive Chef Simon Furley, The Paddock restaurant heroes local, seasonal produce from our market garden and surrounds. Foraged from the forest and sourced from the region’s best farmers and producers, our promise is to create an incredible dining experience that will leave you inspired and full. We are proud to share this authentic paddock-to-plate philosophy with you.

Our menu pays homage to the Scenic Rim’s farming heritage and is beautifully offset with an extensive wine and cocktail list.

Breakfast at The Paddock restaurant is exclusively for our in-house guests and includes a rustic Farmer’s Platter assortment featuring black pudding pancakes, lardo eggs, halloumi, bacon, grilled farm fresh vegetables, local yoghurt with muesli, croissants, assorted preserves and sourdough bread and more.

Breakfast is available exclusively for in-house guests between 7am and 9.30am.

Sit back and enjoy a rustic-yet-refined three-course à la carte menu while overlooking the rolling green mountains of Lamington National Park. Dishes are simply prepared and designed around local producers that offer seasonal high quality produce all year round.

The Paddock offers a two or three-course à la carte menu with dishes including beef tartare, as well as meat cooked over the parrilla grill, and meals heroing local vegetables.

The menu is delivered with utmost attention to sight, taste and texture and perfectly matched by a hand-picked list of premium Australian and imported wines. Whether you’re staying with us or just visiting for the evening, all dietary requirements can be fulfilled.

Dinner is available Wednesday to Sunday between 5.30pm and 8pm.
