The Paddock restaurant delivers unpretentious, wholesome fare that celebrates the quality of the local produce. A casual take on fine dining, the restaurant serves up seasonal creations for breakfast, lunch and dinner. Our Executive Chef Cameron Matthews has created an à la carte menu which showcases the region’s finest ingredients, sourcing sustainable produce from the Scenic Rim and the surrounding region of South East Queensland.

The design of the restaurant with its floor-to-ceiling windows and soaring ceiling maximizes the views of the rolling green hills. Designed around the idea of a club house, the restaurant features a large fireplace to enjoy a wine in front of at the end of the day and a communal table for sharing a meal.

Meet our Executive Chef

We are proud to have Chef Cameron Matthews as Chef-in-Residence at The Paddock restaurant. As one of Queensland’s top chefs and a leader in regional restaurants, Cameron values the world beyond our urban areas and the feeling of place that comes from your plate.

From 2012-2016, during his time as head chef at The Long Apron in Montville, Queensland, Cameron maintained two hats in the Australian Good Food and Travel Guide and the Brisbane Times Good Food Guide and topped the QHA’s Best Prestige Restaurant category.

In 2016, Cameron was one of 106 Australians from all walks of life awarded a highly regarded Churchill Fellowship to pursue and develop their passion overseas. During his time in Europe and North America, Chef Matthews took residence at some the world’s leading restaurants committed to sustainability and environmental care and returned with new-found inspiration.

Research, development and implementation of sustainable and environmental practices is an ongoing dedication for Cameron which aligns with his commitment to OzHarvest and Ronni Kahn in combating food waste and nourishing those in need.

Under the helm of our renowned Executive Chef Cameron Matthews, The Paddock restaurant heroes local, seasonal produce from our market garden and surrounds. Foraged from the forest and sourced from the region’s best farmers and producers, our promise is to create an incredible dining experience that will leave you inspired and full. We are proud to share this authentic paddock-to-plate philosophy with you.

Our menu pays homage to the Scenic Rim’s farming heritage and is beautifully offset with an extensive wine and cocktail list.


Breakfast at The Paddock restaurant is exclusively for our in-house guests and includes a rustic Farmer’s Platter assortment featuring black pudding pancakes, lardo eggs, halloumi, bacon, grilled farm fresh vegetables, local yoghurt with muesli, croissants, assorted preserves and sourdough bread and more.

Breakfast is available exclusively for in-house guests between 7am and 9.30am.

Sit back and enjoy a rustic-yet-refined three-course à la carte menu while overlooking the rolling green mountains of Lamington National Park. Dishes are simply prepared and designed around local producers that offer seasonal high quality produce all year round.

Lunch is available Wednesday to Sunday between 12noon and 2.30pm.

The Paddock offers a two or three-course à la carte menu with dishes including Chef Cameron Matthews’ signature beef tartare, as well as meat cooked over the parrilla grill, and meals heroing local vegetables.

The menu is delivered with utmost attention to sight, taste and texture and perfectly matched by a hand-picked list of premium Australian and imported wines. Whether you’re staying with us or just visiting for the evening, all dietary requirements can be fulfilled.

Dinner is available Wednesday to Sunday between 5.30pm and 8pm.

Our casually elegant Cocktail Bar and Sunset Terrace create an intimate ambience – think an open fireplace and a welcoming timber terrace. Enjoy views across the valley as you sip a full bodied red or craft beer.

Sample signature cocktails using seasonal ingredients that evolve with the surroundings. Enjoy curated craft beer or wine tasting sessions in our Hazelwood Bar or spend the afternoon sunning yourself on the terrace or while the evenings away by a crackling fireplace.
